PASTA DOUGH

90 g Nextjen Gluten-Free Artisan Pasta & Pizza “00” Blend
1 large egg
5 ml olive oil

Method:


Make a well in the flour, add egg and olive oil, whisk together with a fork. Empty mixture onto a lightly floured table and knead into a smooth dough. Wrap and let rest for hydration, then roll noodles.

PIZZA RECIPE

10 ml dry yeast

10 ml water (Mix yeast with water and set aside)

250 ml milk of your choice

30 ml Nextjen Gluten-Free ‘00’ Pizza Pasta Flour (2 tbsp)

5 ml Salt

30 ml Olive (milk, 30 ml pizza pasta flour, salt and olive oil bring to the boil while stirring)

420 g Nextjen Gluten-Free ‘00’ Pizza Pasta Flour (all remaining flour)

Method:

PREHEAT OVEN 450° F. Mix yeast with water and set aside. In a saucepan whisk milk, 30 ml

Nextjen Gluten-Free ‘00’ Pizza Pasta Flour, salt and olive oil and bring to boil while stirring.

Place 420 mg flour in mixer with paddle, pour in boiling hot, thickened liquid slowly, mix til

smooth dough is formed. Wait for dough to cool to room temperature (89° F or 32° C) then

add softened yeast mixture and stir, let rise 10-15 min. Divide dough into 4 even portions and roll into balls. Roll each ball into an 8-9-inch shell using a rolling pin. Bake in 450F oven on a

pizza stone 3-4 mins, take out the baked shell and place on toppings. Bake the topped pizza
